How does our sense of smell work?

Your average human can sense up to 10,000 different odors.  We use our sense of smell everyday to enjoy the scent of a fresh bouquet of flowers, or to determine who not to sit next to.  Whether we like it or not humans can smell both good and bad scents.  Every time we breathe, we swirl air containing odor molecules into our nostrils.  From there the odor molecules pass over the olfactory epithelium which contains millions of scent receptor neurons.  The receptor neurons can read the odor molecules and tell our brain if it's a pleasant or malodorous smell.
